ACK Gioia (Joy-ahh) is a mother/daughter team that specializes in producing fresh, handmade artisan mozzarella, burrata, and stracciatella cheese at our retail location located in Brewster, MA on Cape Cod. We are also a retail store and cafe selling our handmade cheese as well as a curated selection of outsourced cheeses from around the US and the world, fresh and dried pasta, sauces, olive oils, crackers, charcuterie boxes to-go, freshly baked focaccia, and Nantucket honey (produced by Elizabeth’s husband David “Bee Happy Honey Company”.) We serve breakfast and lunch daily with a selection of delicious sandwiches and salads using only the highest quality meats, cheeses, and bread. Every sandwich is made to order. We have a large outdoor deck for dining and offer a well curated selection of beer and wine.

ACK Gioia is mother-daughter-owned producing artisan, hand-pulled cheese themselves. Elisabeth was born in Ferrara, Italy, and raised in Naples. She met her husband David in Rome while she was studying for her translation degree. They ultimately settled on Nantucket Island where they have been for the last thirty-plus years. Elisabeth started making cheese for family and friends in 2011 because she missed the fresh cheeses in Italy.  From there word started to spread and ACK Gioia was born. Elizabeth’s daughter Alexandra got involved and they’ve sold their cheese on Nantucket for the past ten years. Alex recently moved to Cape Cod and they decided to open a retail location in Brewster. They are open seasonally from May through October.

ACK Gioia artisan cheese consists of freshly handmade Mozzarella, Burrata, and Stracciatella.

Artisan Mozzarella

Mozzarella

Mozzarella is a classic Neapolitan fresh cheese, originally only found in the region of Campania, and is known as “Mozzarella di Bufala” because it is made from freshwater buffalo milk, which contains 10% milk fat. ACK Gioia Mozzarella is made from pasteurized cow’s milk with 4% milk fat, known in Italy as “fior di latte” meaning fresh milk. Because of this, fior di latte mozzarella is milder in flavor. Our cheese contains high moisture content making it best enjoyed fresh, however, you can freeze it to reduce the moisture for cooking purposes. Best served at room temperature.

Artisan Burrata ACK Gioia

Burrata

A freak snow storm in Puglia, Italy in the 1950s left a creamery without power. In an effort to preserve and save their fresh cream, they filled mozzarella with the cream. After discovering how delicious this new idea was, burrata was born. With further development, burrata is now typically filled with Stracciatella. When you cut into an ACK Gioia burrata you will see the wonderful stracciatella spill out which makes it perfect on salads, in soups, and for dipping. It’s truly a favorite and best served at room temperature.

Stracciatella

Stracciatella pronounced strach-a-tella is made from pulled-apart mozzarella mixed with cream and salt for flavor. You may have heard this word being described as a gelato flavor or even the Stracciatella soup. This is because the root meaning of stracciatella is ribbons so, when you are eating our wonderful stracciatella you will be snacking on ribbons of mozzarella mixed with cream. Our stracciatella is also what you will find as the filling in our burrata. Best served at room temperature.

Cheese Facts & Freshness

ACK Gioia cheese has no preservatives giving them a shelf life of only one week from the date they are made. We strive for the element of freshness and we recommend that when you purchase any of our cheese that it be consumed either that same day or within a few days from the purchase date. ACK Gioia cheese is best served at room temperature. Let them sit on the counter for about an hour depending on the climate, to come back to room temperature.
